Irving Seventh-day Adventist Host Cooking Classes and Wellness Weekend
Paula Ballard, Mrs. Emerson, Dr. Emerson, LoAnn Nguyen IRVING November 3, 2002 On November 1-3, 2002 the Irving Seventh-day Adventist church hosted its 2nd annual Health and Wellness weekend. The speaker was Dr. David Emerson from the Lifestyle Center in Ardmore, Oklahoma. There were a total of four sessions for the weekend. On Friday night Dr. Emerson did a presentation on Diabetes and Hypertension. Several studies demonstrate that lifestyles changes can significantly reduce and reverse both of these diseases. In one study it was shown that healthy medical students who were given a high fat for a few days became diabetic. The plant-based diet is the best diet for both of these diseases. Sabbath was indeed a blessed one as we saw the correlation between medical science and the Bible. Cervical cancer is rare in Jewish women and this is because their spouses are circumcised. We also learnt that the eighth day, after the child was born, is indeed the best day to circumcise because this is when the vitamin K levels are highest. Vitamin K is essential for clotting of the blood. Sabbath afternoon's presentation was " Exercise, Endurance and Vegetarianism" The take away from this session was that it is never too late to start exercising and to make dietary changes. On Sunday we looked at Heart Disease. Again it was demonstrated that the Vegan diet can reverse many of the symptoms of Heart Diseases including Angina. Sunday's session culminated with a cooking demonstration and a Vegan brunch. Participants kept going back for 2nd and 3rd servings of the Vegan delights. The Vegan cheesecake made with cashew milk was a sumptuous treat. The cooking demonstration on Sunday was the final in an eight-week series hosted by Health and Temperance Coordinators LoAnn Nguyen and Paula Ballard. The classes started with eleven students including three males and grew steadily over the eight-week period. Participants were taught how to prepare Vegan breakfast, entrees and desserts. LoAnn and Paula stated that the high point of the cooking classes for them was making Vegan desserts. At Irving we are all looking forward to another grand session next year.
