Scrambled Tofu

2 packages firm tofu 1 medium onion 1 large tomato

½ medium green pepper Salt, garlic powder & basil…season to taste

¼ to ½ tsp tumeric (yellow)

Chop the onions & green pepper and saute in a small amount of olive oil. Add the tofu and mash to a scrambled egg consistency. Add tumeric ( for color) and season with salt garlic powder and basil to taste. Cut the tomato into small chunks and add last. Cook a little more. Good scrambled egg substitute.
