Simple Dessert Bonus: Fruit Tapioca
Soak 1/2 cup tapioca in 4 cups water. Cook over medium heat, stirring until translucent. Remove from stove and stir in a 12-oz. can of orange or pineapple concentrate. Stir in 1/3 cup honey, 1 T. grated orange rind or lemon extract. Add a 14 1/2-oz. can of pineapple chunks, drained. Chill and serve topped with sliced kiwi or strawberries.
