Eggplant Sauté

1 med. eggplant

2 sm-med. or l lg. green pepper

2 med. onion

1/4-1/2 tsp garlic powder or 2 cloves chopped fresh garlic

salt to taste

Peel eggplant and chunk. Cut pepper and onion in chunks. Sauté in small amount of olive oil (2-3 T.), adding a little water to steam till tender. May also add zucchini and tomatoes.
