Date-Nut Spread
2 cups cut up dates (Cut pitted dates in 3 pieces each or use the soft date pieces*)
3/4 cups water
Simmer these gently for 15-20 minutes, then remove from stove and stir to a paste. Mash any chunks. Add 1 cup chopped walnuts or pecans. Variation: Blend date pieces and walnuts in blender with a little water on low speed.
Orange Date-Nut Spread: Add finely grated orange rind to the above ingredients.
